Spicy Teff Porridge

Move over quinoa and oatmeal, it’s the little guy’s time to shine. Replace your morning grain with teff–the smallest grain in the world. It may be small, but Ethiopians have used teff as a staple in everything from bread to beer for thousands of years. Teff has a mild nutty flavor that is enhanced by toasting it over medium-high heat before cooking.
Ingredients
- 1/2 cup teff
- 1 1/2 cup water
- 2 tsp coconut oil
- 1/4 tsp salt
- 1 tsp ginger (freshly grated or ground)
- 1 cup unsweetened almond milk
- 2 servings Vanilla Chai Vega Oneâ„¢ Nutritional Shake
- Toasted sliced almonds (optional)
Preparation

Heat a saucepan over medium heat. Add teff and toast, stirring frequently until the grains begin to pop, 3 to 6 minutes.

Add water, coconut oil, salt and ginger.

Bring to a gentle boil, cover and cook for 15 minutes, stirring occasionally to prevent teff from sticking to bottom.

Turn off heat and stir in almond milk and Vega One.

Ladle into four bowls, and top with toasted sliced almonds.
