Morning Amaranth Porridge

Rise and shine! For a personalized start to your morning, make it creamy amaranth porridge. With a luxurious soaking time, the grain will be ready to cook once your alarm goes off. Top it with your favorites from dried fruit to savory nut butter. Mix and match flavors depending on the season and start your morning strong.
Ingredients
- 1 cup amaranth
- 3 cups water
- 2 Tbsp lemon juice
- Toppings of your choice: grounded flax seeds, chia seeds, chopped nuts, dried fruits, fresh fruit, shredded coconut flakes, coconut butter, nut butter, non-dairy milk
- For high protein option: Stir in 1/2 cup Vega Sport® Performance Protein
- 1 Tbsp nut butter
Preparation

In a medium bowl, place water, lemon juice, and amaranth, and soak overnight (on countertop or fridge).

Once amaranth is soaked, rinse under cold water and discard soaking liquid.

In a small pot, add soaked amaranth and 3 cups of fresh water. Cover and bring to a boil. Once boiling, reduce heat, and let simmer for 20 minutes.

Remove from heat, and stir in your choice of toppings.
