Don’t let apples steal the fall dessert show. Treat yourself and your dinner date to these pecan poached pears.
Ingredients
- 2 pears, peeled and cored
- Poaching Liquid:
- 2 1/2 cups water
- 1/2 cup agave
- Juice of 1 lemon
- 1 cinnamon stick
- Zest of 1 orange
- 1 star anise
- 1 vanilla bean, scraped
- Pinch of salt
- Nut Stuffing:
- 1/2 cup pecans
- 1/4 cup coconut
- 1/4 tsp cinnamon
- 1/2 cup maple syrup
- Pinch of salt
- Dried cranberries or blueberries
- Topping:
- Coconut non-dairy ice cream
Preparation

Add all ingredients of the poaching liquid to a large pan on medium high heat.

Bring to a boil and turn heat down to a simmer.

Add pears and let poach about 12 to 15 min, or until tender. Once done, remove from liquid and let cool.

To make nut stuffing, lightly toasting pecan and coconut. Put in bowl and mix with other ingredients.

Slice pears in half and hollow out slightly.

Add nut mixture, drizzle with poaching liquid and top with coconut non-dairy ice cream.
