If there is one dessert that screams “summer,” it’s ice cream.This simple, gluten-free, and vegan ice cream recipe can be whipped up in a snap. Three simple ingredients (coconut milk, a sweetener of your choice and vanilla extract) form the creamy base for your favorite flavorings–we happen to love chocolate chip mint.
Tip: Make sure your ice cream base is chilled before processing in your ice cream maker. (No ice cream maker? Try this trick)
Ingredients
- 2 cans full fat coconut milk
- 1 tsp vanilla extract
- 1 cup coconut sugar (or your preferred sweetener)
- 1 tsp mint extract
- 1 chopped chocolate bar or 1 chopped bar of Vega® Maca Chocolate
Preparation

Mix coconut milk, vanilla extract, coconut sugar, and mint extract until combined, refridgerate

Add ice cream base to your prepared ice cream maker and process

Add Vega® Maca Chocolate or regular chocolate chunks for the last two minutes of processing

Enjoy right away, or freeze overnight for a more firm texture.
