Overnight Oatmeal with Fruit and Nuts

Every holiday season, store-bought fruitcakes arise from their annual slumber and present themselves to the world. Speckled with candied fruits, like pineapple and cherries, and riddled with pecans, these fruitcakes “grace” the holiday festivities. However, fruitcakes don’t just have to be the defeated, perfunctory treat at the end of dessert table. In fact, we believe their true place should be at the breakfast bar. This delicious overnight oatmeal recipe includes those classic fruitcake ingredients while presenting the holiday staple in a fresh, new and fun way.

Ingredients
- 3 cups water
- 1 cup gluten-free steel cut oats
- 2 Tbsp pineapple, dried
- 2 Tbsp cherries, dried
- 2 Tbsp pecans, chopped
- 2 Tbsp agave nectar
- 1 tsp cinnamon, ground
- 1 tsp pure vanilla extract
- 1 serving French Vanilla Vega One® Organic All-in-One Shake
- ½ tsp rum (optional)
Preparation

Bring water to a boil. Once boiling, add oats and continue to boil for 1 minute.

After 1 minute, remove from heat and add the rest of ingredients and stir until well incorporated.

Cover and let sit for 6-12 hours.

Enjoy either at room temperature or slightly warmed* (on stove for best results).
*Note: If warmed, place desired amount into a small saucepan and warm on low heat. If oatmeal is too thick, thin with almond milk until desired consistency.
