Slow Cooker Carrot Cake

Just when you thought your mornings couldnโ€™t get any better, weโ€™ve hit you with this recipe that will knock your socks off...or on, since youโ€™ll most likely just be crawling out of bed to enjoy this one.ย  Carrot cake lovers unite, over this easy, healthy version of your favorite treat.

Ingredients

  • 1 cup steel cut oats
  • 1 cup shredded carrots
  • 5 cups water
  • 1 serving Vanilla Chai Vega Oneยฎ
  • ยผ cup raisins
  • ยฝ tsp sea salt
  • ยผ cup chopped walnuts
  • 1 tsp maple syrup (optional)

Preparation

  • Place all ingredients except the walnuts and maple syrup in your slow-cooker and cook on low for 7 hours.

  • Once oats have finished cooking, top with chopped walnuts and drizzle with maple syrup.
