Apricot Coconut Smoothie

Fresh apricots grace the grocery store shelves for only a short time each year. Make the most of these summertime stone fruits and add them to your next smoothie.


  • ½ cup unsweetened coconut milk (beverage type, not canned)
  • 2 fresh apricots, washed, pitted and quartered
  • ½ cup ice
  • 2 Tbsp unsweetened shredded coconut
  • 1 serving French Vanilla Vega One™ Nutritional Shake


  1. Add all ingredients to blender.

  2. Blend until smooth.
