Raspberry Pistachio Vegan Ice Cream

Hot summer days are coming, and to help beat the heat, I like to have a stock of delicious frozen treats in my freezer. Raspberry Pistachio Nice Cream is an alternative to raspberry ice cream, made without dairy OR an ice cream maker, ย with just as much flavor and only five ingredients. If you love the consistency of soft-serve, use frozen bananas in place of fresh and enjoy immediately after blending.

Ingredients

  • 3 ripe peeled bananas
  • 1 scoop Vanilla Vegaยฎ Essentials
  • 1 cup raspberries
  • 1/4 cup chopped pistachios
  • 1 tsp vanilla extract
  • Toppings
  • A handful of fresh raspberries
  • A handful of chopped pistachios

Preparation

  • Add the bananas, Vega Essentials, ยฝ cup of the raspberries and vanilla extract to your blender and puree until smooth.

  • Scoop the mixture into a freezer-safe container. Stir in the remaining ยฝ cup of raspberries and pistachios.

  • Freeze for 3 to 4 hours.

  • Scoop into bowls and top with fresh raspberries and chopped pistachios.
