Hot summer days are coming, and to help beat the heat, I like to have a stock of delicious frozen treats in my freezer. Raspberry Pistachio Nice Cream is an alternative to raspberry ice cream, made without dairy OR an ice cream maker, with just as much flavor and only five ingredients. If you love the consistency of soft-serve, use frozen bananas in place of fresh and enjoy immediately after blending.
- 3 ripe peeled bananas
- 1 scoop Vanilla Vega® Essentials
- 1 cup raspberries
- 1/4 cup chopped pistachios
- 1 tsp vanilla extract
- A handful of fresh raspberries
- A handful of chopped pistachios
Add the bananas, Vega Essentials, ½ cup of the raspberries and vanilla extract to your blender and puree until smooth.
Scoop the mixture into a freezer-safe container. Stir in the remaining ½ cup of raspberries and pistachios.
Freeze for 3 to 4 hours.
Scoop into bowls and top with fresh raspberries and chopped pistachios.
