Thanksgiving Leftover Recipes: Mashed Potato Cakes

Have oodles of mashed potatoes sitting around during the holidays? Whip up these savory cakes to breathe new life into your leftovers.

Ingredients

  • 3-4 cups leftover mashed potatoes
  • 1-2 Tbsp chopped chives
  • ½ onion, finely diced
  • 2 cloves, garlic, finely diced
  • 1 handful spinach, finely chopped
  • 2 Tbsp nutritional yeast
  • ½ cup chickpea flour
  • 2 Tbsp coconut oil
  • Chickpea flour for dusting
  • Salt and pepper to taste

Preparation

  • Mix everything in a bowl.

  • Form small balls out of ingredients, roll in a little additional chickpea flour, and then flattened them into cakes. (This additional dredging step helps to keep them from sticking to the pan or falling apart).

  • Heat large pan on medium.

  • Add oil to heated pan and add 3-4 cakes (depending on size) and cook approximately 5 minutes each side.

  • Serve with Cashew Sour Cream .
