Minty Green Garbanzo Bean Soup

Based on a traditional British pea and mint soup, the added spinach in our green garbanzo bean soup packs this rich and hearty soup with extra green goodness. Packed with protein and fiber, rumor is the green garbanzo bean is set to be the next big thing in the culinary world and has even been deemed the new edamame by foodies in the know. For added richness and an even more beautiful presentation, channel your inner artist and garnish with coconut milk.
Ingredients
- 1 Tbsp coconut oil
- 1 onion, chopped
- 3 cups vegetable stock
- 1 lb (454g) frozen green garbanzo beans
- 2-3 cups spinach
- ¾ cup loosely packed fresh mint
- Salt, to taste
- Canned coconut milk, optional
Preparation

Melt coconut oil in a medium saucepan over medium heat. Add the onion and sauté for 3 to 5 minutes or until soft.

Add vegetable broth, green garbanzo beans, spinach and mint. Bring to a boil and simmer for 5 minutes.

Purée and season with salt.

Finish each bowl with coconut milk if desired.
