With all of their comfort food quality and all of the topping variations available mashed potatoes seem like the perfect celebration food. Not a fan of potatoes? Add variety by adding mashed sweet potatoes and cauliflower into the mix too.

Ingredients
- 4 large washed, skin on, organic russet potatoes (or sweet potatoes)
- 2 Tbsp vegan butter
- ¼ cup unsweetened plain almond milk
- Salt, as needed
Preparation

Place potatoes in a large pot of boiling, lightly salted water

Bring back to a boil over medium heat then lower to a simmer and cook until fork tender

Drain potatoes, cool slightly

Add vegan butter and almond milk

Mash until creamy (you can use a hand mixer if you like them really creamy)

Serve family style in a large bowl
