Refreshing Gazpacho Soup

This weekend, take a stroll to your local farmer’s market to collect some vine-ripened tomatoes and fresh produce for this delightful, summertime gazpacho soup.
Ingredients
- 1 long English cucumber, roughly chopped
- 2 bell peppers, roughly chopped
- 4 plum tomatoes, roughly chopped
- 1/2 red onion, roughly chopped
- 3 garlic cloves, minced, roughly chopped
- 3 cups tomato juice
- 1/4 cup wine vinegar
- 1/4 cup Vega® Antioxidant Omega Oil Blend
- 1/2 Tbsp kosher salt
- Freshly ground black pepper to taste
