Pistachio Lime Cauliflower

This isn’t your average cauliflower. This pistachio lime cauliflower is easy to make and tastes fantastic. If you have any leftovers, it makes a nutrient dense addition to your lunch salad.
Ingredients
- 1 head of cauliflower
- 2 Tbsp lime juice
- 4 Tbsp olive oil
- 1 tsp maple syrup (optional)
- Pinch of salt
- 1/4 cup of crushed pistachios
Preparation

Bring pot of water to a boil.

Wash cauliflower and cut into individual bite-sized florets.

Add florets to steaming basket and drop gently into pot of boiling water to lightly steam, with the lid on.

While cauliflower is cooking, whisk together lime juice, olive oil, maple syrup and salt. Set aside.

Once cauliflower becomes tender, remove from water and place in side dish. Drizzle with lime sauce and garnish with pistachios.
