Pistachio Lime Cauliflower

Serves 4 20 minute prep time

Pistachio Lime Cauliflower

This isn’t your average cauliflower. This pistachio lime cauliflower is easy to make and tastes fantastic. If you have any leftovers, it makes a nutrient dense addition to your lunch salad.

Ingredients

  • 1 head of cauliflower
  • 2 Tbsp lime juice
  • 4 Tbsp olive oil
  • 1 tsp maple syrup (optional)
  • Pinch of salt
  • 1/4 cup of crushed pistachios

Preparation

  • Bring pot of water to a boil.

  • Wash cauliflower and cut into individual bite-sized florets.

  • Add florets to steaming basket and drop gently into pot of boiling water to lightly steam, with the lid on.

  • While cauliflower is cooking, whisk together lime juice, olive oil, maple syrup and salt. Set aside.

  • Once cauliflower becomes tender, remove from water and place in side dish. Drizzle with lime sauce and garnish with pistachios.
