Vegan Cauliflower Alfredo Sauce

A Vegan Cauliflower Alfredo Sauce that’s as creamy and rich as a traditional alfredo sauce, but created entirely from plant-based ingredients and packed with nutrition. Whip this vegan alfredo sauce up in minutes and use it on your favorite guilt-free pasta dishes. Add nutritional yeast to your alfredo to give the sauce a cheesy flavor.
Ingredients
- 1 head cauliflower, cut into florets (about 4 cups)
- 1 tsp olive or coconut oil
- 1 onion, diced
- 3 garlic cloves, chopped
- ¼ tsp nutmeg
- ¼ tsp cayenne
- ½ cup unsweetened almond milk
- Salt and pepper
- ½ lemon, juiced
- ¼ cup nutritional yeast (optional)
Preparation

Steam cauliflower until soft.

In a saucepan, heat oil over medium-high heat. Add in onion and garlic and sauté until translucent about 4-6 minutes.

In a blender, combine cauliflower, onions and garlic, nutmeg, cayenne and almond milk. Puree until smooth. Add back to saucepan to heat.

Season sauce with lemon juice and salt and pepper.
