Thanksgiving Leftover Recipes: Mashed Potato Cakes

Have oodles of mashed potatoes sitting around during the holidays? Whip up these savory cakes to breathe new life into your leftovers.
Ingredients
- 3-4 cups leftover mashed potatoes
- 1-2 Tbsp chopped chives
- ½ onion, finely diced
- 2 cloves, garlic, finely diced
- 1 handful spinach, finely chopped
- 2 Tbsp nutritional yeast
- ½ cup chickpea flour
- 2 Tbsp coconut oil
- Chickpea flour for dusting
- Salt and pepper to taste
Preparation

Mix everything in a bowl.

Form small balls out of ingredients, roll in a little additional chickpea flour, and then flattened them into cakes. (This additional dredging step helps to keep them from sticking to the pan or falling apart).

Heat large pan on medium.

Add oil to heated pan and add 3-4 cakes (depending on size) and cook approximately 5 minutes each side.

Serve with Cashew Sour Cream .
