Smashed Potatoes

Name something you can’t waffle iron. Waffle irons were once considered single-purpose kitchen tools, but we now know they have a multitude of uses. Waffle iron recipes continue to surprise and delight, with these waffled smashed potatoes at the top of our list. Enjoy them alongside a (tofu) scramble or even as a dinner side dish. Pro tip: Pre-smash the potatoes just a bit with a potato masher, or your favorite collegiate mug would work well too.
Ingredients
- 1½ lbs baby or fingerling potatoes, any variety
- Olive oil, as needed
- 2 tsp onion powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ bunch parsley, finely chopped
- Salt and pepper
Preparation

Cook potatoes in boiling water until tender enough to pierce with a fork

Drain potatoes and in a large mixing bowl toss with olive oil, seasonings and herbs

Place potatoes in waffle iron, 1 potato per small square

Cook in waffle maker for 5-7 minutes or until crisp and golden

Remove and repeat process until you have used all potatoes
