A pumpkin gingerbread chia pudding with a festive flair. Using Vega One® Vanilla Chai helps take the flavor and nutrition value of this chia pudding to the next level. Perfect for dessert or a midday sweet fix.
- 1 serving Vanilla Chai Vega One™ Nutritional Shake
- 2 tsp raw cacao or unsweetened cocoa powder
- Stevia to taste
- 1 tsp vanilla
- Allspice, cinnamon, and pumpkin pie spice (or nutmeg and ginger) to taste
- 2 tsp chia seeds
- 2 tsp milled sprouted chia seeds (optional, use additional chia seeds if you like)
- ½ can of pumpkin
- ¼ to ½ cup almond milk
Mix dry ingredients in a bowl.
Add ¼ can of pumpkin and your almond milk.
Mix, taste, and let sit for 20 minutes.
Layer pumpkin on the bottom of your dish (try using glass so you can see the layers) and top with chia pudding and pumpkin seeds. Garnish with whatever you like and enjoy!
