Protein Peanut Butter Cups

Serves 4 30 minute prep time

Want a snack or dessert with protein? Have a peanut butter cup! Yes, you read that right: a peanut butter cup, made with Vega Sport® Premium Protein. This recipe should make 12 peanut butter cups, and enjoying 3 will give you over 10 grams of plant-based protein.



  • 4 Tbsp peanut butter (or your fav nut butter – I’ve made these the cashew and almond butter too)
  • ½-1 Tbsp coconut oil
  • 1 serving Vanilla Vega Sport® Premium Protein
  • 1 ½ cup vegan chocolate chips
  • Optional: chopped peanuts (or your fav nut) and sea salt


  • Stirring constantly, melt the peanut butter and coconut oil together over a double boiler. Once incorporated, remove from heat and stir in Protein & Greens until smooth. Set aside.

  • Temper chocolate: Reserve 1/3 of the chocolate chips. Melt remaining 2/3 over a double boiler. Once melted, remove from heat and stir in remaining chocolate chips. Stir until fully melted and mixed. This will ensure an even consistency and that the chocolate sets.

  • Add a layer of chocolate to the bottom of 12 mini (6 regular) silicon cupcake liners.

  • Roll peanut butter mixture into small balls. Flatten them into disks and place in the chocolate-lined silicon molds or muffin liners before coating with chocolate.

  • Optional: lightly sprinkle chopped peanuts and sea salt on each cup.

  • Store in the freezer for at least 20 minutes or until ready to serve.
