Lemon Protein Cookies

Serves 12 15 minute prep time

With over 5 grams of protein per serving, these lemon glazed protein cookies will help to satisfy your sweet tooth.

Ingredients

  • 1/2 cup coconut oil
  • 1 1/2 cup cane sugar
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • Zest from 1 lemon
  • Juice from one medium sized lemon
  • 1/4 tsp salt
  • 1 1/2 cups of all-purpose gluten-free flour mix
  • 1/4 cup water
  • 3 servings Vanilla Vega® Essentials
  • Lemon Glaze:
  • 1 cup powdered sugar
  • 1-2 Tbsp lemon juice (depending on desired consistency)

Preparation

  • Pre-heat oven to 350F

  • Mix all ingredients in large mixing bowl

  • Drop tablespoon-sized cookies onto baking sheet and flatten slightly

  • Bake in oven for 8 to 10 minutes

  • Optional: Top with glaze
