Lemon Protein Cookies

With over 5 grams of protein per serving, these lemon glazed protein cookies will help to satisfy your sweet tooth.
Ingredients
- 1/2 cup coconut oil
- 1 1/2 cup cane sugar
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- Zest from 1 lemon
- Juice from one medium sized lemon
- 1/4 tsp salt
- 1 1/2 cups of all-purpose gluten-free flour mix
- 1/4 cup water
- 3 servings Vanilla Vega® Essentials
- Lemon Glaze:
- 1 cup powdered sugar
- 1-2 Tbsp lemon juice (depending on desired consistency)
Preparation

Pre-heat oven to 350F

Mix all ingredients in large mixing bowl

Drop tablespoon-sized cookies onto baking sheet and flatten slightly

Bake in oven for 8 to 10 minutes
