Frozen Fudge Pops

Frozen Fudge Pops

Whether you’re feeding a kid, or are a kid-at-heart, these Fudge Pops from Peggy K’s new Kitchen Cures are sure to win over hearts this summer.

Ingredients

  • 1 really ripe avocado
  • 1¾ cups vanilla coconut milk
  • ¼ cup + 1Tbsp cocoa powder
  • ½ cup coconut sugar (or maple syrup)
  • 2 tsp vanilla extract
  • 2 tsp coconut oil
  • ½ tsp salt

Preparation

  • Scoop out avocado into a food processor.

  • Add remaining ingredients and process until smooth.

  • Pour the filling into popsicle molds.

  • Freeze for 30 minutes, then insert popsicle sticks and continue freezing overnight (or at least 3 hours).
