Move over potatoes, parsnips are up. Parsnips will make fries before guys a good option. A quick spiralizing and pan-frying (or roasting) will bring out the parsnip’s natural sweetness and make it a fun side dish that will have you asking, “you want parsnip fries with that?”.
Ingredients
- 2 medium parsnips, peeled
- 1 Tbsp coconut oil
- Salt to taste
Preparation

Spiralize the parsnips. If you do not own a spiralizer, cut parsnips into thin sticks.

Heat pan on medium and add oil. Add parsnips and toss a few times until starting to brown and edges are getting crispy (about 8 minutes).

Generously sprinkle with salt and serve – preferably with sriracha ketchup.

Rather roast? Pre-heat oven to 425°F. Toss spiralized or chopped parsnips in a medium bowl with melted coconut oil. Spread out on a cooking sheet and sprinkle with salt. This would also be a good time to experiment with additional spices such as smoked paprika, curry powder or harissa. Stir after 10 minutes of roasting. Roast until brown and crisping on edges, about 15-20 minutes.
