Healthy Protein Brownies

This is the ultimate fudgy healthy protein brownie recipe, and you donโt even have to tell your friends itโs made without gluten, and with zucchini and Vega Oneยฎ Organic All-in-One Shake (whatโs up 20 grams premium plant-based protein, veggies and greens, and 50%DV of 12 vitamins and minerals??). We certainly wonโt!
Ingredients
- 3 Tbsp ground flaxeeds
- 6 pitted dates, chopped
- ยฝ cup water
- ยฝ cup shredded zucchini
- ยฝ cup apple sauce
- ยผ cup coconut oil, melted
- 2 tsp vanilla extract
- 1 serving chocolate Vega Oneยฎ Organic All-in-One Shake
- ยฝ cup Dutch dark cocoa powder
- ยฝ tsp baking soda
- ยผ cup coconut sugar
- ยฝ cup quinoa flour
Preparation

Pre-heat oven to 350ยฐF.

Combine ground flax, chopped dates and water in a small bowl and let sit for 1/2 hour.

In a food processor, shred zucchini until fine.

Add the rest of the ingredients and blend until just combined.

Grease a 9ร9 pan with coconut oil and pour in batter.

Bake for 20 minutes for moist fudgy brownies, or 25-30 minutes for more cake-like brownies.

Let cool 15 minutes before cutting into squares.
