Walnut Mushroom Vegan Taco “Meat”

Serves 4 10 minute prep time

We can’t wait to taco-bout how delicious this faux meat is! Made from walnuts and mushrooms (though you can use almost any nut or seed if you’re not a walnut fan), it has the texture and savory characteristics of ground beef. Next Tuesday, make a taco bar with hard and soft corn tortillas, avocado, cilantro, salsa, and fresh red cabbage slaw. Let the Taco Tuesday tradition begin!

Ingredients

  • ½-1 jalapeno, seeds removed
  • 3 cloves garlic, peeled
  • 1 Tbsp chili powder
  • 1 cup mushrooms
  • ½ cup walnuts
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • Salt, as needed

Preparation

  • In a food processor, process jalapeno, garlic, chili powder and a little salt until finely ground. Remove from food processor into a large bowl.

  • Add mushrooms into food processor and process until coarsely chopped. Remove and add to the jalapeno mix.

  • Add walnuts and seeds into food processor and process until finely ground. Add into bowl with jalapeno and mushrooms. Season with salt.

  • Mix everything together and taste for seasoning.

  • Serve on tortillas with your favourite taco toppings.
