Apricot Coconut Smoothie

Fresh apricots grace the grocery store shelves for only a short time each year. Make the most of these summertime stone fruits and add them to your next smoothie for a delicious antioxidant boost!
- ½ cup unsweetened coconut milk (beverage type, not canned)
- 2 fresh apricots, washed, pitted and quartered
- ½ cup ice
- 2 Tbsp unsweetened shredded coconut
- 1 scoop Vega One, French Vanilla
- Combine all ingredients in a blender and blend until smooth. Adjust liquid to reach desired thickness.
