Peggy K’s Chocolate Mint Pudding Parfait

Dating back to the culinary Cretaceous period, the love affair between chocolate and mint is a tale as old as time. Dark, brooding, and sexy chocolate is balanced by the cool and breezy lightness of fresh mint. Even better, this plant-based chocolate mint pudding parfait is nutrient dense and completely guilt-free. Let the love story begin.


  • Chocolate Pudding:
  • 2 really ripe avocados
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla flavor
  • 1 bar of Vega® Maca Chocolate
  • or vegan dark chocolate bar
  • Mint Pudding:
  • 2 really ripe avocados
  • 1 tsp mint extract
  • 1/3 cup of maple syrup


  1. Cut avocado in half and remove the seed.

  2. Scoop out the inside of the avocado into a food processor.

  3. Add the maple syrup and cocoa and continue to blend together until it’s all smooth.

  4. Refrigerate 30 min before serving.

  5. Assembly:

    In glass cylinder bowl/glass, layer chocolate layer, then mint layer, then repeat. Garnish with shaving of maca chocolate bar.
