Simple Cornbread in a Mug

We’ve got your plant-based bowl of chili’s new sidekick. Feast your eyes on this simple cornbread recipe.

Ingredients

  • 3 Tbsp cornmeal
  • 2 Tbsp gluten-free flour mix
  • Pinch of salt
  • 1/4 tsp baking powder
  • 2 tsp maple syrup
  • 1 tsp melted non-dairy butter (such as Earth Balance)
  • 1/8th cup of water or Silk® Unsweetened Almondmilk

Preparation

  1. Place all dry ingredients in small bowl and mix together.

  2. Add in wet ingredients and mix together until well combined.

  3. Using cooking spray or leftover non-dairy butter, grease mug to prevent cornbread from sticking to the sides.

  4. Pour cornbread mixture into mug and cook in microwave for 1 1/2 minutes.
