  • 1 long English cucumber, roughly chopped
  • 2 bell peppers, roughly chopped
  • 4 plum tomatoes, roughly chopped
  • 1/2 red onion, roughly chopped
  • 3 garlic cloves, minced, roughly chopped
  • 3 cups tomato juice
  • 1/4 cup wine vinegar

  • 1/2 Tbsp kosher salt
  • Freshly ground black pepper to taste
