Mini Pizza Stuffed Mushrooms

Stuffed mushroom caps

Bring the life to the party when you whip up these easy to make pizza stuffed mushrooms. Easy to make, and will win over even the toughest crowds.


  • ½ green pepper diced
  • ½ red pepper diced
  • ½ cup chopped spinach
  • ⅓ cup diced white onion
  • 2 cloves of garlic
  • 1 Tbsp olive oil
  • 1 350g/12oz. jar of marinara sauce or pizza sauce
  • 5 basil leaves roughly chopped
  • 10 baby Portobello mushroom caps
  • Optional: vegan mozzarella or parmesan for toppings


  1. Set oven to broil (500° F), and have baking sheet ready with either parchment paper or lightly oiled so mushrooms won’t stick to the pan.

  2. Toss diced onion into skillet with olive oil and cook till soft. Add in peppers and garlic and cook until tender.

  3. Add in marinara sauce and spinach. Let simmer for five minutes.

  4. While sauce is simmering, wash the mushroom caps, making sure the stems are fully removed. Evenly place them on your baking sheet.

  5. Remove sauce from stove and lightly place sauce in mushroom caps until full. Top with vegan cheese.

  6. Place stuffed mushrooms in oven for 10 to 12 minutes.

  7. Remove and sprinkle with chopped fresh basil.
