Cinnamon Bun Protein Pancakes

Move over cinnamon buns, there’s a new favorite breakfast treat in town. Whip up these quick and easy pancakes that not only feature plant-based protein, they also have some hidden greens in them too.

Ingredients

  • 1 package of your favorite gluten-free, vegan pancake mix (follow directions regarding amounts of non-dairy milk, and other ingredients used)
  • 2 servings Vega® Protein & Greens
  • ⅓ cup Silk®Unsweetened Almondmilk (in addition to what you’re adding into your pancake mix)
  • 1 tsp coconut oil
  • Cinnamon Mixture :
  • ½ serving Vanilla Vega® Protein & Greens
  • 1 heaping Tbsp cinnamon
  • 3 Tbsp vanilla extract
  • 1 Tbsp coconut oil
  • ¼ cup pancake batter
  • ¼ cup water
  • 1 tsp maple syrup

Preparation

  1. Mix pancake mix, Vega Protein & Greens and almond ilk in a large mixing bowl and set aside.

  2. Mix together cinnamon mixture ingredients into a small bowl, and set aside.

  3. Heat pan or griddle over medium heat, add coconut oil.

  4. With a mixing spoon pour individual pancakes or use a 1/3 cup of batter to make each pancake.

  5. As pancakes cook, add a cinnamon swirl on top of each pancake (uncooked side).

  6. Once underside of pancake is cooked and edges start to bubble, flip over pancakes and continue to cook on the other side.

  7. Once pancakes are full cooked, serve with maple syrup.
