Carrot Cake Pudding Cups

Whip up these tasty snacks with plant-based protein in a flash! Carrot Cake puddings are an easy snack option for the whole family to enjoy.

Toss into small Mason jars or containers to take on the go. For an extra dose of YUM, top them off with raisins, and toasted coconut flakes.


  • 2 cups cashew
  • 3/4 cup dates
  • 1 cup grated carrots
  • 1/4 tsp cinnamon
  • 1/2 cup Silk® Unsweetened Original Almondmilk
  • 1/2 cup shredded coconut
  • 2 scoops Vanilla Vega® Essentials
  • 300g/ 10.5oz. silken or soft tofu
  • Optional: Maple syrup, to taste


  1. Place cashews and dates into a food processor to process for one minute. Add in the rest of the ingredients and pulse until completely smooth.

  2. Pour mixture evenly into six small bowls, Mason jars or cups. Store in refrigerator until snack time.
