A delicious Blondie treat, packed with protein? How can you say no? Vega Blogger Robin of Knead to Cook revamped a traditional Blondie recipe by adding Vega One, chickpeas and nut butter
- 1 can (15 oz) chickpeas, drained
- ½ cup almond butter
- ½ cup maple syrup
- ¼ cup salted peanuts
- 2 tsp vanilla extract
- 1 Tbsp Vanilla Vega One™ Nutritional Shake
- ¼ tsp baking soda
- ¼ tsp baking powder
- Pinch of salt
- Optional Toppings: Chopped nuts, raw cacao nibs, vegan chocolate chips, pretzel pieces, candy pieces, chopped cookies, etc.
Preheat your oven to 350F and spray an 8×8 glass baking pan with baking spray. Set aside.
Place all of your ingredients into your Vitamix or food processor and blend until smooth and creamy.
Spoon your mixture into the prepared pan and place the toppings of choice on top.
Bake for about 45 minutes or until golden around the edges.
Remove and let cool completely before slicing.
