Earlier this year, I moved from Waterloo, Ontario to Vancouver, British Columbia. If you’ve ever moved before, I’m sure you know about how the packing process tends to uncover treasures that you didn’t know or forgot that you had. Loose change in the couch cushions, the sweater you swore the washing machine ate, and in my case, a little tub of frozen red something in the back of my freezer.
You see, as a food blogger, I often make recipes a few months prior to when I’ll be posting them on my blog. I also do a lot of testing, which means ending up with way more of x, y or z recipe than I can personally consume before it starts to lose freshness. The solution? Freezing!
Back in March, as I cleaned out my freezer and stumbled across this small container of frozen red mystery puree, I tried to remember what recipe it might have been. It didn’t look like a smoothie, so my mind went to sauce. Cranberry sauce? I didn’t host Christmas the 4 months prior, but... a-ha! Thanksgiving. I’d been on cranberry sauce making duty and slightly–ok, way more than slightly–over-estimated the quantity we’d need. So here were the leftovers, frozen solid, 4 months later.
I’m sure a few of you might have had a similar situation happen, and if so, I’ve got just the solution for your leftovers – or for your whole frozen cranberries if that’s what you’ve got kicking around.
Every time I make this Spiced Cranberry Apple Smoothie, it reminds me of the holidays. Vanilla Vega Protein & Greens helps to balance the tartness from the berries and apple, and the spice combination of cinnamon and ginger gives it a warm, festive flavor. I hope you enjoy it too!
Ingredients
- 1 serving of Vanilla Vega® Protein & Greens
- 1 cup water
- 1 cup frozen cranberries or ½ cup of leftover homemade cranberry sauce
- 1 tart apple, cored
- 1 tsp cinnamon
- 1 tsp ground ginger
- A few cubes of ice
Preparation

Add all ingredients except for the ice to your blender and blend until completely smooth. (This might take a few extra seconds in order to break down the apple skin.)

Toss in a few ice cubes and continue blending, adjusting the thickness by adding more if you wish.

Pour into a tall glass and serve.
