Pineapple Fried Rice

Pineapple Fried Rice

Serves 4 30 minute prep time

Skip the takeout tonight and try a hearty pineapple fried brown rice. Use leftover brown rice from yesterday’s meal, add in pineapple, veggies and cashews for a flavorful take on traditional fried rice.

Ingredients

  • 1 Tbsp oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 4 garlic cloves, minced
  • 1½ cups, fresh or canned, chopped pineapple
  • 2 cups cooked brown rice
  • 2 Tbsp soy sauce or tamari
  • 1 lime, juiced
  • ¼ bunch cilantro
  • 2 green onions, sliced
  • ¼ cup roasted cashews, chopped

Preparation

  • In a large pan or wok, heat oil. Add in onion and cook 3 to 4 minutes or until translucent.

  • Add in red bell pepper, garlic and pineapple. Sauté 8 to 10 minutes or until pineapple starts to brown.

  • Add in brown rice, soy sauce and lime. Cook until rice is hot.

  • Garnish with cilantro, green onions and cashews.
