- 2 cups cashew
- 3/4 cup dates
- 1 cup grated carrots
- 1/4 tsp cinnamon
- 1/2 cup Silk® Unsweetened Original Almondmilk
- 1/2 cup shredded coconut
- 2 scoops Vanilla Vega® Essentials
- 300g/ 10.5oz. silken or soft tofu
- Optional: Maple syrup, to taste
Place cashews and dates into a food processor to process for one minute. Add in the rest of the ingredients and pulse until completely smooth.
Pour mixture evenly into six small bowls, Mason jars or cups. Store in refrigerator until snack time.
