Organic Baby Greens in the Spotlight
Vegetable producers are now providing a more robust selection of baby greens – like baby kale, baby spinach, and baby arugula – to help meet consumer demand. Growing baby greens, however, can be tricky. Some become too big to be considered a “baby green”, or are rejected for other cosmetic reasons. Earthbound Farm® faces this challenge every day.
Due to the perishable nature of fruits and veggies, a large amount of produce ends up in the compost or landfill every year. In fact, 40% of food becomes waste in the US every year. That’s over 400lbs of food per person, per year. Food waste is responsible for 2.6% of all US greenhouse gas emissions – the equivalent of 27 million cars on the road – and is the top contributor to landfills today. Gunders, Dana. et al. Earthbound Farm® in Vega One Organic
With the launch of the Vega One Organic All-in-One Shake, Vega and Earthbound Farm® saw an opportunity to work together and prevent some of those greens from ending up wasted. Earthbound Farm®, with its history of innovation, was more than up for the challenge of how to reduce supply chain inefficiencies and bring their baby greens to our all-in-one shake.
Proudly green, Vega One now includes ingredients made from a combination of Earthbound Farm® organic chard, kale, and lettuce (romaine, oak leaf, lolla rossa, and tango). The exact ratio depends on the season and on availability. Our greens are perfectly nutritious – just too big for baby salad mixes.
We’re happy to announce that 400,000kg of baby greens from Earthbound Farm® will be diverted to Vega Products in 2018.
Now that Vega One Organic is using organic Earthbound Farm® ingredients, we’re looking for other ways we can use their organic produce and reduce waste. We are committed to better, and also to less.
