Stacked Basil and Tomato Salad

Ingredients (Serves 4)

  • 5 large tomatoes (heirloom tomatoes work beautifully in this salad)
  • 15 basil leaves
  • 2 Tbsp Vega Antioxidant Omega Oil Blend
  • 2 Tbsp reduced balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Slice tomatoes into ½ inch rounds
  2. On a serving platter—or four individual plates—layer four slices of tomatoes (one for each serving).
  3. Season the first layer with salt and pepper and top each tomato slice with one basil leaf. Repeat the layers until you’ve stacked 4 tomatoes slices.
  4. Drizzle each stack with ½ tablespoon of Vega Antioxidant Omega Oil and ½ tablespoon of reduced balsamic vinegar.
  5. Enjoy!
